Preheat the oven to 400°F (200°C).

Wash and scrub the potatoes, then pat them dry.

Prick the potatoes all over with a fork.

Rub olive oil, salt, and black pepper all over the potatoes.

Place the potatoes on a baking sheet and bake for 45-50 minutes, or until they are tender when pierced with a fork.

Remove the potatoes from the oven and let them cool for 5 minutes.

Cut a cross on the top of each potato and gently squeeze the sides to open them up.

Sprinkle with chopped fresh herbs, if desired.
