Prepare all the ingredients by washing and chopping the vegetables.

In a wok or large skillet, heat the vegetable oil over medium heat.

Add the garlic and ginger, and stir fry for 1 minute.

Add the tofu and stir fry for another 2 minutes.

Add the broccoli, carrots, bell peppers, and mushrooms, and stir fry for 5 minutes or until the vegetables are tender-crisp.

Season with soy sauce, salt, and black pepper, and stir fry for another 2 minutes.

Remove from heat and let it rest for 5 minutes.
