  1. Press the tofu to remove excess water and cut it into small cubes.
  2. Slice the shiitake mushrooms, red bell pepper, and onion.
  3. Mince the garlic cloves and grate the ginger.
  4. In a small bowl, mix soy sauce, sesame oil, chili paste, and cornstarch to make the sauce.
  5. Heat vegetable oil in a wok or large skillet over medium-high heat.
  6. Add minced garlic and grated ginger, stir-fry for 1 minute.
  7. Add tofu cubes and stir-fry until lightly browned, about 5 minutes.
  8. Add shiitake mushrooms, red bell pepper, and onion. Stir-fry for another 3 minutes.
  9. Pour the sauce over the tofu and vegetables. Stir well to coat.
  10. Cook for 2 minutes until the sauce thickens.
  11. Season with salt and black pepper.
  12. Remove from heat and let it rest for 5 minutes.
  13. Serve hot with steamed rice or noodles.
