  1. Cook the toasted barley according to package instructions. Drain and set aside.
  2. Bring a pot of water to a boil and blanch the green beans for 2 minutes. Drain and transfer to an ice bath to cool. Drain again.
  3. Cut the tofu into cubes and pat dry with a paper towel.
  4. Heat a pan over medium heat and add the tofu. Cook until golden brown on all sides, about 5 minutes. Remove from heat.
  5. In a large bowl, combine the cooked barley, blanched green beans, tofu, diced red bell pepper, sliced scallions, chopped cilantro, lime juice, soy sauce, rice vinegar, sesame oil, salt, and black pepper. Toss well to combine.
  6. Let the salad rest for 5 minutes to allow the flavors to meld. Serve chilled or at room temperature.
