In a large bowl, mix together rolled oats, almond butter, honey, and vanilla extract until well combined.

Add chopped nuts, dried fruits, dark chocolate chips, and salt to the mixture. Stir until all ingredients are evenly distributed.

Line a baking dish with parchment paper and transfer the mixture into the dish. Press it down firmly to create an even layer.

Place the dish in the refrigerator and let it rest for at least 1 hour.

Once the granola bars have set, remove them from the dish and cut into desired shapes.
