The Algerian Bessboussa
Bessboussa is a traditional Algerian dessert made with semolina and honey. It is often served during special occasions and celebrations.

Preheat the oven to 180°C (350°F).

In a large bowl, mix together the semolina, sugar, and baking powder.

Add the yogurt, vegetable oil, and vanilla extract to the bowl and mix well to form a crumbly texture.

Transfer the mixture to a greased baking dish and press it down firmly.

Using a sharp knife, cut the mixture into diamond shapes.

Place an almond or pistachio in the center of each diamond.

Bake in the preheated oven for 25-30 minutes, or until golden brown.

While the bessboussa is baking, prepare the syrup by combining the honey and water in a saucepan over medium heat. Bring to a boil and then reduce the heat and simmer for 5 minutes.

Remove the bessboussa from the oven and immediately pour the hot syrup over it, allowing it to soak in.

Let the bessboussa cool completely in the baking dish, then cut along the diamond shapes and serve.
