Cheese-Free Stuffed Shells
Stuffed shells is a traditional Italian dish, but this cheese-free version adds a twist by using a flavorful vegetable stuffing instead.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 80 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Cook the jumbo pasta shells according to the package instructions.

In a pan, heat olive oil and sauté onions and garlic until softened.

Add mushrooms and spinach, and cook until wilted.

Season with salt, black pepper, and Italian seasoning.

Remove from heat and let the mixture cool.

Preheat the oven to 375°F (190°C).

Stuff each cooked pasta shell with the vegetable mixture.

Place the stuffed shells in a baking dish and pour tomato sauce over them.

Cover the dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10 minutes until the shells are slightly golden.

Let the dish rest for 10 minutes before serving.
