  1. Rinse quinoa thoroughly. In a saucepan, bring water and quinoa to a boil. Reduce heat, cover, and simmer for 15 minutes.
  2. In a separate saucepan, heat vegetable oil over medium heat. Add garlic, bell pepper, carrot, and peas. Stir-fry for 5 minutes.
  3. In a small bowl, mix together red curry paste, coconut milk, lime juice, soy sauce, and salt. Add the mixture to the stir-fried vegetables.
  4. Once the quinoa is cooked, fluff it with a fork and add it to the vegetable and curry mixture. Stir everything together and cook for another 5 minutes.
  5. Sprinkle with fresh cilantro and roasted peanuts before serving.
