Press the tofu to remove excess water, then cut it into cubes.

In a large pot, heat some oil and fry the tofu until crispy. Set aside.

In the same pot, add the red curry paste and cook for a minute.

Pour in the coconut milk and vegetable broth. Stir well.

Add sugar, soy sauce, and lime juice. Simmer for 10 minutes.

Add bell peppers, snow peas, and Thai basil leaves. Cook for another 5 minutes.

Cook the rice noodles according to the package instructions.
