In a large pot, combine coconut milk, vegetable broth, lemongrass stalks, kaffir lime leaves, and galangal. Bring to a boil.

Reduce heat and let it simmer for 10 minutes.

Add tofu, mushrooms, cherry tomatoes, and red bell pepper. Simmer for another 5 minutes.

Stir in lime juice, fish sauce, sugar, and salt. Cook for an additional 2 minutes.

Remove from heat and let it rest for 5 minutes.
