Rinse the black rice under cold water.

In a saucepan, combine the black rice, water, and a pinch of salt. Bring to a boil.

Reduce heat to low and simmer for 30 minutes, or until the rice is tender and the liquid is absorbed.

In a separate saucepan, heat the coconut milk, palm sugar, and salt over medium heat until the sugar is dissolved.

Once the rice is cooked, pour the coconut milk mixture over the rice and stir well.

Remove from heat and let it rest for 10 minutes.

Serve warm or chilled, topped with sliced mango if desired.
