  1. Preheat a grill or grill pan over medium heat.
  2. Cut the tempeh into thin slices.
  3. In a bowl, mix olive oil, salt, and black pepper. Add tempeh slices and toss to coat.
  4. Grill the tempeh for 3-4 minutes on each side, until lightly browned and heated through.
  5. Toast the bread slices.
  6. Spread mustard and vegan mayonnaise on one side of each bread slice.
  7. Layer lettuce, tomato, red onion, avocado, and grilled tempeh on half of the bread slices.
  8. Top with the remaining bread slices.
  9. Cut the sandwiches in half and serve.
