Tempeh Reuben
The Reuben sandwich is believed to have been invented in the early 20th century by Arnold Reuben, a German immigrant and owner of Reuben’s Delicatessen in New York City.

Heat a skillet over medium heat and add butter.

Slice the tempeh into thin strips and add it to the skillet. Cook for 5 minutes on each side until golden brown.

Toast the rye bread slices.

Spread Thousand Island dressing on one side of each slice.

Layer tempeh, sauerkraut, and Swiss cheese on one slice of bread.

Top with another slice of bread.

Repeat for the second sandwich.

Return the sandwiches to the skillet and cook for 2-3 minutes on each side until the cheese is melted.

Remove from the skillet and let rest for 5 minutes.

Slice the sandwiches in half and serve.
