  1. Heat olive oil in a large pot or tajine over medium heat.
  2. Add the onion and garlic, and sauté until softened.
  3. Add the carrots, potatoes, zucchini, bell peppers, and tomatoes.
  4. Stir in the chickpeas, vegetable broth, cumin, ginger, turmeric, cinnamon, salt, and black pepper.
  5. Bring to a boil, then reduce heat to low and simmer for 45 minutes, or until the vegetables are tender.
  6. Stir in the fresh cilantro and parsley.
  7. Serve hot with lemon wedges.
