Tabbouleh is a traditional Middle Eastern salad made with bulgur, parsley, mint, tomatoes, and lemon juice. It is usually served as a side dish, but in this recipe, it is transformed into a delicious vegetarian burger.

Cook the bulgur according to package instructions. Drain and let it cool.

In a large bowl, combine the cooked bulgur, chickpeas, chopped tomatoes, cucumber, red onion, parsley, and mint leaves.

In a small bowl, whisk together lemon juice, olive oil, salt, black pepper, and minced garlic.

Pour the dressing over the tabbouleh mixture and toss to combine.

Preheat the grill and cook the burger buns until lightly toasted.

Assemble the tabbouleh burger by placing a generous amount of the tabbouleh mixture on the bottom bun, top with the other half of the bun.
