Cut the eggplant into bite-sized pieces.

In a bowl, mix cornstarch, soy sauce, rice vinegar, and sugar to make a sauce.

Heat vegetable oil in a pan and fry the eggplant until golden brown.

Remove the eggplant from the pan and set aside.

In the same pan, add garlic, ginger, and Szechuan peppercorns. Stir-fry for a minute.

Add the sauce mixture and cook until it thickens.

Add the fried eggplant back to the pan and toss to coat.
