  1. Rinse the rice under cold water until the water runs clear.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped onion and minced garlic to the pot and sauté until golden brown.
  4. Add the ground cinnamon, allspice, cardamom, and salt to the pot and stir well.
  5. Add the rinsed rice to the pot and stir to coat the grains with the spices.
  6. Pour in the water and bring to a boil.
  7. Reduce the heat to low, cover the pot, and let the rice simmer for 15-20 minutes, or until the rice is cooked and the water is absorbed.
  8. In a small pan, toast the pine nuts until golden brown.
  9. Fluff the cooked rice with a fork and transfer to a serving dish.
  10. Top the rice with the toasted pine nuts and fresh parsley.
  11. Let the rice rest for 5 minutes before serving.
