Super Soup
Soup is one of the oldest forms of food preparation, dating back to at least 20,000 BC.

Heat olive oil in a large pot over medium heat. Add chopped onions, minced garlic, sliced carrots, and diced celery. Cook until vegetables are tender.

Add diced potatoes, chopped tomatoes, mixed vegetables, bay leaf, thyme, salt, and black pepper. Stir well.

Pour vegetable broth into the pot and bring to a boil. Reduce heat and simmer for 20 minutes.

Remove the bay leaf and discard. Use an immersion blender to blend the soup until smooth.

Let the soup rest for 5 minutes before serving. Garnish with fresh parsley.
