Sweet potatoes are not actually potatoes, but rather root vegetables that belong to the morning glory family.

  1. Peel and chop the sweet potatoes, onion, and garlic cloves.
  2. In a large pot, heat olive oil over medium heat.
  3. Add the onion and garlic cloves and sauté until fragrant.
  4. Add the chopped sweet potatoes, vegetable broth, ground cumin, ground cinnamon, salt, and black pepper to the pot.
  5. Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes or until the sweet potatoes are tender.
  6. Use an immersion blender or a regular blender to puree the soup until smooth.
  7. Return the soup to the pot and stir in the coconut milk.
  8. Simmer for an additional 5 minutes.
  9. Serve the sweet potato soup hot, garnished with fresh cilantro.
