Sweet Potato Skins – Texmex Style
Sweet potatoes are not only delicious but also a great source of dietary fiber and vitamins A and C. They are a staple in Tex-Mex cuisine, adding a unique flavor and texture to various dishes.

Preheat the oven to 400°F (200°C).

Wash and scrub the sweet potatoes, then pat them dry.

Cut the sweet potatoes in half lengthwise, and scoop out the flesh, leaving a thin layer attached to the skin. Reserve the scooped-out flesh for another use.

In a small bowl, mix together olive oil, chili powder, cumin, paprika, and salt.

Brush the mixture over the sweet potato skins, making sure to coat both the inside and outside.

Place the skins on a baking sheet, skin side down, and bake for 25-30 minutes, or until crisp and lightly browned.

In the meantime, prepare the filling by combining black beans and corn kernels in a bowl.

Remove the sweet potato skins from the oven and fill each skin with the bean and corn mixture.

Sprinkle shredded cheese over the top of each filled skin.

Return the skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Remove from the oven and garnish with sliced green onions.

Serve hot with a dollop of sour cream on top, if desired.
