Peel and slice the sweet potatoes into 1/4-inch thick rounds.

Place the sweet potato rounds on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper.

Bake for 20 minutes, flipping halfway through, until the sweet potatoes are tender and slightly crispy.

In a small bowl, mash the avocado with lemon juice, salt, and pepper.

Toast the bread slices.

Spread the mashed avocado on two slices of bread.

Top with baby spinach, sliced tomato, red onion, and the baked sweet potato rounds.
