Sweet potatoes are an excellent source of vitamin A, vitamin C, and fiber.
This is vegan and gluten free recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Peel and chop the sweet potatoes.

In a large pot, sauté the onion and garlic until translucent.

Add the sweet potatoes, vegetable stock, peanut butter, ground cumin, ground coriander, salt, and black pepper to the pot.

Bring to a boil and then reduce heat and simmer for 20 minutes, or until the sweet potatoes are tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Return the soup to the pot and stir in the coconut milk and lime juice.

Simmer for an additional 5 minutes.

Serve hot, garnished with fresh cilantro.
