  1. In a small bowl, whisk together soy sauce, maple syrup, rice vinegar, cornstarch, and water.
  2. Heat vegetable oil in a large pan or wok over medium heat.
  3. Add garlic and ginger to the pan and sauté for 1 minute.
  4. Add onion, red bell pepper, carrot, and snow peas to the pan. Stir-fry for 3-4 minutes until vegetables are slightly tender.
  5. Add broccoli and cashews to the pan and stir-fry for an additional 2 minutes.
  6. Pour the sauce mixture over the vegetables and cashews. Stir well to coat everything.
  7. Cook for another 2-3 minutes until the sauce thickens.
  8. Remove from heat and let it rest for 5 minutes.
  9. Serve the sweet cashew stir-fry hot with rice or noodles.
