Sweet Cashew Stir-fry (Vegan)
Cashews are actually seeds, not nuts, and they are native to Brazil.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 35 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 14.

In a small bowl, whisk together soy sauce, maple syrup, rice vinegar, cornstarch, and water.

Heat vegetable oil in a large pan or wok over medium heat.

Add garlic and ginger to the pan and sauté for 1 minute.

Add onion, red bell pepper, carrot, and snow peas to the pan. Stir-fry for 3-4 minutes until vegetables are slightly tender.

Add broccoli and cashews to the pan and stir-fry for an additional 2 minutes.

Pour the sauce mixture over the vegetables and cashews. Stir well to coat everything.

Cook for another 2-3 minutes until the sauce thickens.

Remove from heat and let it rest for 5 minutes.

Serve the sweet cashew stir-fry hot with rice or noodles.
