Cut the eggplant, zucchini, bell pepper, and red onion into small cubes.

Place the vegetables on a baking sheet, drizzle with olive oil, salt, and black pepper.

Roast in the preheated oven for 20 minutes or until the vegetables are tender.

In a saucepan, combine the cherry tomatoes, capers, olives, balsamic vinegar, honey, salt, and black pepper. Simmer for 5 minutes.

Remove the roasted vegetables from the oven and mix them with the tomato sauce.
