Preheat the oven to 375°F (190°C). In a bowl, mix the textured vegetable protein, breadcrumbs, onion, garlic, soy sauce, salt, and black pepper.

Form the mixture into small meatballs and place them on a baking sheet. Bake for 20 minutes or until golden brown.

In a wok or large skillet, heat the vegetable oil over medium heat. Stir-fry the bell pepper for 2 minutes.

In a separate bowl, mix together the rice vinegar, ketchup, brown sugar, cornstarch, water, and pineapple chunks with their juice.

Pour the sauce mixture into the wok with the bell pepper. Cook until the sauce thickens.
