  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, melt the vegan butter over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the sauerkraut to the pot and stir well. Cook for 5 minutes.
  4. Add the vegetable broth, plant-based cream, salt, and black pepper. Stir to combine.
  5. Bring the mixture to a simmer and cook for 10 minutes.
  6. Meanwhile, peel and slice the potatoes.
  7. In a greased baking dish, layer half of the sliced potatoes. Top with half of the sauerkraut mixture.
  8. Repeat the layers with the remaining potatoes and sauerkraut mixture.
  9. Cover the baking dish with foil and bake for 45 minutes.
  10. Remove the foil and place the vegan sausages on top of the sauerkraut. Bake for an additional 15 minutes, or until the potatoes are tender and the sausages are heated through.
  11. Let the dish rest for 5 minutes before serving.
