Preheat the oven to 180°C (350°F).

In a large mixing bowl, combine the self-rising flour, sun-dried tomatoes, and fresh parsley.

Add the olive oil and water to the bowl and mix until a sticky dough forms.

Turn the dough out onto a floured surface and knead lightly for a few minutes.

Shape the dough into a round loaf and place it on a baking sheet lined with parchment paper.

Use a sharp knife to score the top of the loaf in a cross pattern.

Bake in the preheated oven for 25-30 minutes, or until the damper is golden brown and sounds hollow when tapped on the bottom.

Remove from the oven and let it rest for 10 minutes before serving.
