Boil the potatoes until they are cooked but still firm. Peel and cut them into cubes.

Heat oil in a pan and add cumin seeds. Let them crackle.

Add turmeric powder, red chili powder, coriander powder, and amchur powder. Mix well.

Add the boiled potato cubes and salt. Stir gently to coat the potatoes with the spices.

Cook on medium heat for 10-15 minutes, stirring occasionally, until the potatoes are crispy and golden brown.
