  1. Preheat the oven to 180°C.
  2. Cut the top of the capsicums and remove the seeds from inside.
  3. In a pan, heat oil and add chopped onions. Saute until golden brown.
  4. Add ginger-garlic paste and saute for a minute.
  5. Add chopped tomatoes and cook until they turn mushy.
  6. Add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala powder, and salt. Mix well.
  7. Add boiled and mashed potatoes to the pan. Mix everything together.
  8. Stuff the capsicums with the potato mixture.
  9. Place the stuffed capsicums in a baking dish and bake for 25-30 minutes.
  10. Garnish with fresh coriander leaves.
  11. Serve hot with roti or rice.
