Stuffed Plantains
Plantains are a staple in many tropical cuisines and are often used in both savory and sweet dishes. They are rich in potassium and dietary fiber.

Preheat the oven to 400°F (200°C).

Cut the plantains in half lengthwise, leaving the skin intact.

Place the plantains on a baking sheet and bake for 20 minutes, or until they are soft.

While the plantains are baking, prepare the stuffing. In a pan, heat olive oil over medium heat.

Add diced onion, minced garlic, and chopped bell pepper. Sauté until the vegetables are tender.

Add black beans, cumin powder, paprika, and salt. Cook for another 2-3 minutes.

Remove the plantains from the oven and let them cool slightly.

Carefully scoop out the flesh from the center of each plantain half, leaving a shell.

Mash the scooped-out plantain flesh and mix it with the prepared stuffing.

Stuff the plantain shells with the mixture.

Heat olive oil in a pan over medium heat.

Place the stuffed plantains in the pan and cook for 3-4 minutes on each side, until they are golden brown.

Remove from heat and let them rest for 10 minutes before serving.
