  1. Rinse the grape leaves in cold water. In a large pot, bring water to a boil and blanch the grape leaves for about 3 minutes. Drain and set aside.
  2. In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the onion and sauté until translucent. Add the rice and cook for 2 minutes while stirring.
  3. Add 2 cups of water, diced tomato, chopped parsley, chopped mint, lemon juice, salt, and pepper. Mix well and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
  4. Place a grape leaf on a flat surface, shiny side down. Add a spoonful of the rice mixture in the center of the leaf. Fold the sides of the leaf inward, then roll it tightly into a cigar shape.
  5. Repeat with the remaining grape leaves and rice mixture.
  6. In a separate saucepan, arrange the stuffed grape leaves in layers. Drizzle with 2 tablespoons of olive oil and add enough water to cover the dolmades. Place a heatproof plate or lid on top to keep the dolmades from unraveling during cooking.
  7. Bring to a boil, then reduce the heat to low and simmer for 30 minutes.
  8. Remove from the heat and let the dolmades cool in the pot for 15 minutes.
  9. Serve chilled or at room temperature. Enjoy!
