Stuffed Grape Leaves (Dolmades)
Ingredients
Instructions
-
Rinse the grape leaves in cold water. In a large pot, bring water to a boil and blanch the grape leaves for about 3 minutes. Drain and set aside.
-
In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the onion and sauté until translucent. Add the rice and cook for 2 minutes while stirring.
-
Add 2 cups of water, diced tomato, chopped parsley, chopped mint, lemon juice, salt, and pepper. Mix well and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
-
Place a grape leaf on a flat surface, shiny side down. Add a spoonful of the rice mixture in the center of the leaf. Fold the sides of the leaf inward, then roll it tightly into a cigar shape.
-
Repeat with the remaining grape leaves and rice mixture.
-
In a separate saucepan, arrange the stuffed grape leaves in layers. Drizzle with 2 tablespoons of olive oil and add enough water to cover the dolmades. Place a heatproof plate or lid on top to keep the dolmades from unraveling during cooking.
-
Bring to a boil, then reduce the heat to low and simmer for 30 minutes.
-
Remove from the heat and let the dolmades cool in the pot for 15 minutes.
-
Serve chilled or at room temperature. Enjoy!
