Rinse the grape leaves under cold water and set aside.

In a bowl, combine the rice, finely chopped tomato, onion, parsley, mint leaves, olive oil, lemon juice, salt, and black pepper.

Place a grape leaf on a flat surface, shiny side down. Spoon a small amount of the rice mixture onto the center of the leaf.

Fold the sides of the leaf over the filling, then roll it up tightly from the bottom to the top.

Repeat with the remaining grape leaves and rice mixture.

Place the stuffed grape leaves in a large pot, seam side down, in a single layer.

Pour water over the grape leaves until they are just covered.

Place a heatproof plate on top of the grape leaves to keep them submerged.

Cover the pot and bring the water to a boil. Reduce the heat and let the grape leaves simmer for 30 minutes.

Remove the pot from the heat and let the stuffed grape leaves rest for 15 minutes.

Serve the stuffed grape leaves warm or at room temperature.
