Stuffed baked sweet potatoes with broccoli, Swiss chard and hummus recipe

Preheat the oven to 400°F (200°C).

Wash the sweet potatoes and prick them with a fork. Place them on a baking sheet and bake for 45-50 minutes, or until tender.

In the meantime, steam the broccoli and Swiss chard until tender.

Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly.

Cut the sweet potatoes in half lengthwise and scoop out the flesh, leaving a thin layer of potato inside the skin.

Mash the sweet potato flesh in a bowl and mix in the steamed broccoli, Swiss chard, hummus, olive oil, garlic, salt, and black pepper.

Spoon the mixture back into the sweet potato skins and place them back on the baking sheet.

Bake for an additional 10 minutes, or until heated through.
