In a saucepan, bring the vegetable broth to a boil. Add the wholewheat couscous, cover, and remove from heat. Let it sit for 5 minutes.

Meanwhile, heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic cloves. Cook until onion becomes translucent.

In a small bowl, mix together ground cumin, ground coriander, ground turmeric, and cayenne pepper. Add the spice mixture to the skillet and cook for another minute.

Rinse and drain the chickpeas. Add the chickpeas and cherry tomatoes to the skillet. Cook for 5 minutes, until tomatoes start to soften.

Chop fresh parsley and fresh mint. Add the herbs to the skillet along with the cooked couscous. Stir well to combine.

Squeeze the juice of one lemon over the couscous mixture. Season with salt and black pepper. Stir again.

Remove from heat and let it rest for a few minutes before serving. Garnish with additional fresh herbs if desired.
