Butternut squash is a great source of vitamin A and C, as well as fiber. It is also known for its sweet and nutty flavor.

Preheat the oven to 200°C (400°F).

Cut the butternut squash in half lengthwise and remove the seeds.

Place the squash halves on a baking sheet, cut side up.

Drizzle olive oil and maple syrup over the squash.

Sprinkle cinnamon and salt evenly over the squash.

Roast in the oven for 40-45 minutes, or until the squash is tender and caramelized.

While the squash is roasting, toast the pecans in a dry skillet over medium heat for 3-4 minutes, until fragrant.

Remove the squash from the oven and let it rest for 10 minutes.

Sprinkle toasted pecans and fresh parsley over the squash.
