Squash-Quinoa Soup
Quinoa is actually a seed, not a grain, and it is a complete protein source, containing all nine essential amino acids.
This is vegan and gluten free recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Peel and dice the butternut squash.

Chop the onion and mince the garlic cloves.

Heat olive oil in a large pot over medium heat.

Add the onion and garlic, and sauté until softened.

Add the diced butternut squash, ground cumin, ground coriander, salt, and black pepper to the pot.

Stir well and cook for 5 minutes.

Add the quinoa and vegetable broth to the pot.

Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the squash and quinoa are cooked.

Remove from heat and let it rest for 5 minutes.

Use an immersion blender or a regular blender to puree the soup until smooth.

Stir in fresh parsley and lemon juice.
