Peel and dice the sweet potatoes.

Slice the leeks.

In a large pot, heat some oil and add the leeks. Cook until softened.

Add the sweet potatoes, red curry paste, and vegetable broth. Bring to a boil.

Reduce heat and simmer until the sweet potatoes are tender.

Add the coconut milk, lime juice, fish sauce, brown sugar, and salt. Stir well.

Simmer for another 5 minutes.

Remove from heat and let it cool slightly.

Use an immersion blender or a regular blender to blend the soup until smooth.
