Spring Rolls
Spring rolls originated in China and are now popular in many Asian cuisines, including Vietnamese cuisine. They are a versatile dish that can be filled with a variety of ingredients, making them a favorite among both vegetarians and non-vegetarians.

Soak the glass noodles in warm water until soft. Drain and cut into smaller pieces.

Shred the carrots, cabbage, and mushrooms into thin strips.

Finely chop the spring onions and garlic.

Heat the oil in a pan and sauté the garlic until fragrant.

Add the shredded carrots, cabbage, mushrooms, and bean sprouts. Cook until slightly tender.

Add the glass noodles, soy sauce, sesame oil, salt, and pepper. Stir well to combine.

Remove from heat and let the filling cool.

Dip a sheet of rice paper in warm water until soft and pliable. Place it on a clean surface.

Spoon some of the filling onto the lower third of the rice paper.

Fold the left and right sides of the rice paper towards the center.

Roll the bottom of the rice paper tightly over the filling, then continue rolling until you reach the top.

Repeat with the remaining rice paper and filling.

Serve the spring rolls with sweet chili sauce.
