  2. In a bowl, mix the crushed cookies, cream cheese, powdered sugar, and vanilla extract until well combined.
  3. Divide the mixture into 12 portions and shape each portion into a ball.
  4. Place the balls on a baking sheet lined with parchment paper.
  5. Use your finger or the back of a spoon to make a small indentation in the center of each ball.
  6. Mix the red and blue food coloring together to create purple. Use a toothpick to add a small amount of purple food coloring to each indentation, creating the iris of the eyeballs.
  7. Use a toothpick to add a small amount of black food coloring to the center of each iris, creating the pupil.
  8. Use a toothpick to add green food coloring around the edges of each ball, creating the bloodshot effect.
  9. Place two mini chocolate chips on each ball, positioning them as the eyes.
  10. Refrigerate the eyeballs for at least 1 hour before serving.
