  2. In a mortar and pestle, crush the toasted anise seeds until roughly ground.
  3. In a large bowl, combine the ground anise seeds, olive oil, minced garlic cloves, red chili flakes, lemon juice, salt, and black pepper. Mix well.
  4. Add the cherry tomatoes, cucumber, red onion, and parsley to the bowl. Toss until the vegetables are coated in the dressing.
  5. Let the salad rest for 10 minutes to allow the flavors to meld together.
