  1. Rinse the split peas under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onions, carrots, celery, and garlic. Saute until vegetables are tender.
  4. Add split peas, vegetable broth, bay leaf, thyme, salt, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for 1 hour or until split peas are tender.
  6. Remove bay leaf and thyme sprigs.
  7. Use an immersion blender or transfer the soup to a blender and blend until smooth.
  8. Serve hot and garnish with fresh herbs if desired.
