Spinach and Red Lentils
Spinach and red lentils are both excellent sources of iron.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 13.

Rinse the red lentils and soak them in water for 30 minutes.

Heat oil in a pan and sauté onion, garlic, and ginger until golden brown.

Add turmeric powder, cumin powder, coriander powder, and garam masala. Stir well.

Add chopped tomatoes and cook until they turn soft.

Drain the soaked lentils and add them to the pan. Cook for 2 minutes.

Add water, cover the pan, and simmer for 15-20 minutes until lentils are cooked.

Add spinach and salt. Cook for another 2-3 minutes until spinach wilts.

Serve hot with rice or bread.
