  1. Heat vegetable oil in a large pot over medium heat.
  2. Add onion, bell pepper, celery, and garlic. Sauté until vegetables are tender.
  3. Stir in Cajun seasoning, paprika, cayenne pepper, and dried thyme.
  4. Add diced tomatoes, vegetable broth, rice, kidney beans, and okra. Bring to a boil.
  5. Reduce heat, cover, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
  6. Season with salt and black pepper.
  7. Garnish with green onions and fresh parsley.
