Heat olive oil in a pan over medium heat.

Add onion, garlic, and jalapeno pepper. Sauté until onion becomes translucent.

Add red bell pepper and sauté for another 2 minutes.

Add cumin, paprika, cayenne pepper, black pepper, and salt. Stir well.

Add cucuzza squash and cook for 5 minutes, stirring occasionally.

Add white vinegar and sugar. Stir well.

Reduce heat to low and simmer for 3 minutes.

Remove from heat and let it cool.

Transfer to a jar and refrigerate for at least 1 hour before serving.
