Preheat the oven to 200°C (400°F).

Peel and chop the sweet potatoes into small cubes.

Finely chop the onion and mince the garlic cloves.

Heat olive oil in a pan and sauté the onion and garlic until translucent.

Add the sweet potatoes, red chili powder, ground cumin, ground coriander, turmeric powder, and salt to the pan. Cook for 10 minutes until the sweet potatoes are tender.

Stir in the frozen peas and cook for another 2 minutes.

Roll out the puff pastry sheets and cut them into squares or rectangles.

Place a spoonful of the sweet potato mixture onto each pastry square and fold over to form a triangle.

Press the edges together with a fork to seal the pasties.

Beat the egg in a small bowl and brush it over the pasties.

Place the pasties on a baking sheet and bake in the preheated oven for 20-25 minutes until golden brown.
