Heat olive oil in a large pot over medium heat.

Add chopped onion and minced garlic, sauté until onion becomes translucent.

Add cumin powder, red chili flakes, salt, and black pepper. Stir well.

Add diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.

Add spinach and cook for another 5 minutes.

Remove from heat and let it cool slightly.

Use an immersion blender or a regular blender to puree the soup until smooth.
