In a skillet, heat the vegetable oil over medium heat.

In the same skillet, add the peanuts and toast until fragrant, about 2-3 minutes.

Remove the peanuts from the skillet and set aside.

In a blender or food processor, combine the onion, garlic cloves, ginger, cayenne pepper, paprika, salt, cilantro, and lime juice.

Heat 1 tablespoon of vegetable oil in the skillet over medium heat.

Add the blended mixture to the skillet and cook for 2-3 minutes.

Add the fried plantains and peanuts to the skillet and toss to coat.
