  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a large saucepan, heat some oil and add the cumin seeds. Cook until they start to sizzle.
  3. Add the chopped onion, garlic, ginger, and green chili. Sauté until the onion becomes translucent.
  4. Add the turmeric powder, red chili powder, and salt. Mix well.
  5. Add the rinsed basmati rice and sauté for a couple of minutes.
  6. Pour in the coconut milk and water. Bring to a boil.
  7. Reduce the heat to low, cover the saucepan, and let the rice simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed.
  8. In a separate pan, lightly toast the cashew nuts until golden brown.
  9. Once the rice is cooked, fluff it with a fork and add the toasted cashew nuts.
  10. Garnish with chopped cilantro and drizzle with lemon juice.
  11. Let the rice rest for 5 minutes before serving.
