Preheat the oven to 375°F (190°C).

In a large skillet, heat olive oil over medium heat. Add onion, garlic, and red bell pepper. Sauté until softened.

Add ground cumin, ground paprika, cayenne pepper, salt, and black pepper. Stir well.

Add chickpeas, canned tomatoes, and spinach. Cook for 5 minutes.

Transfer the mixture to a casserole dish and bake for 20 minutes.

Remove from the oven and let it rest for 10 minutes.

Garnish with fresh cilantro before serving.
