  1. Wash and peel the potatoes. Cut them into bite-sized cubes.
  2. In a large pot, bring water to a boil and add the potatoes. Cook for 10-12 minutes or until the potatoes are fork-tender.
  3. Drain the cooked potatoes and set aside.
  4. In a small bowl, mix together red chili powder, turmeric powder, cumin powder, coriander powder, and salt.
  5. Heat oil in a pan and add the spice mixture. Cook for a minute to release the flavors.
  6. Add the boiled potatoes to the pan and toss well to coat them with the spices.
  7. Cook for another 5 minutes, stirring occasionally.
  8. Remove from heat and drizzle lemon juice over the potatoes.
  9. Garnish with fresh coriander leaves.
  10. Serve hot as an appetizer or side dish.
